Griddle Fortune Cookie Recipe

    Fortunes, cut up and ready to insert.
    1 large egg
     cup sugar - sifted
    2 tbsp vegetable oil
     cup cornstarch (corn flour)
    1 to 2 tbsp water

Beat egg slightly

Add the sugar and beat until smooth and thick

Add oil to mixture and mix in.

In a cup add the water to the cornstarch and mix to a smooth paste. Then add a spoon of batter to the cornstarch. Stir to combine.

Add the cornstarch to the batter and mix well until a smooth consistency.

Heat griddle to about 350oF (180oC).

Drop a heaped teaspoon of batter onto the griddle.

Spread out into a circle about 3 inches round and about 1/8th inch thick.

When just starting to color, flip to brown other side.

Remove one at a time from griddle.

And working very quickly, place a fortune on top of the cookie and fold cookie in half. And then in half again over a blunt-edged object - like a mixing bowl.

Allow to cool and then transfer to a wire rack to cool further.
